Hello, so I got this recipe off my mum and it is one of my favorite chinese dishes. Hope you like it as much as I do :)
What you will need:
- 1 1b of chicken thighs or breasts
- 1/4 tsp pepper
- 1 tbsp of sugar
- 2 tsp light soy sauce
- 1 tsp dark sauce
- 2 tsp cornflour ( cornstarch)
- 3-4 tbsp vegetable oil
- 4 garlic cloves, crushed
- 2 spring onions, cut them into short sections with the green and white parts separated
- 4-6 small fresh green chilies
- 2/3 cup Chicken stock
- Chop the chicken into bite-sized pieces and marinate it with pepper, sugar, soysauce, one cloved crushed garlic and cornflour for 30 minutes.
- Heat the oil in a pre-heated wok, add the chicken pieces and stir fry until lightly brown for about two minutes. Remove the chicken pieces and set aside.
- Add the rest of the garlic, the white parts of the spring onions and stir fry until the garlic turns light brown. ( under medium heat)
- Add the chicken pieces to the wok and stir with the garlic and onions for about a minute.
- Add the chicken stock and bring to a boil.
- Add the remaining part of the spring onions ( green part) and the chili and cook for 3 minutes under medium-low.
- Add the cornstarch to thicken the chicken stock.
Serve hot with steamed rice.
